"Cheez" is weird American stuff which you get in purportedly cheese-flavoured things over there. The main differences, as far as I could see on my last trip to the States, are that "cheese" comes in a range of colours from off-white to yellow, whereas "cheez" is a virulent bright fluorescent orange; "cheese" is made of congealed milk with mould in it, whereas "cheez" is made of toxic waste and artificial flavouring and colouring; "cheese" tastes like cheese and "cheez" tastes like nothing on this Earth. "Cheez" is basically what an alien civilisation would take, from samples, to be probably intended for use as gap filler or a Christmas tree decoration, or numerous possible uses which do not involve having to eat it.

In short, "cheese" is something which the sane would consider edible, and "cheez" is not. Now that I think of it, though, I may have got that the wrong way around.
