Hehe, I'm a vegetarian for the same reason. Never liked meat... it's hard to explain that to some people, though.

Ok, here's my favorite dish, and it only takes about an hour from start to finish. (I use frozen spinach, not fresh, and it's just as yummy. But you might prefer fresh.) You can add just about anything you want, and I leave out the onions, because Don hates onions.

Spinach and Mushroom Quiche

Ingredients
2 tablespoons butter
2 cups fresh sliced mushrooms
2 cups torn spinach leaves
6 green onions, chopped
1 (8 ounce) package refrigerated crescent rolls
1 (1 ounce) package herb and lemon soup mix
1/2 cup half-and-half
4 eggs, beaten
1 cup shredded Monterey Jack cheese

Directions
Preheat oven to 375 degrees F (190 degrees C). Melt margarine over a medium heat and cook mushrooms, spinach and onions for 5 minutes or until tender, stir continuously.
Remove the skillet from heat.
In a 9 inch circular pan or pie plate coated with non-stick cooking spray arrange crescent roll triangles in a circle, with narrow tips hung over the rim of the pie plate about 2 inches. Press dough onto the bottom and side of the pie plate to make a full crust.
In a medium bowl combine the soup mix, half and half cream and eggs. Blend well. Stir cheese and mushroom mixture into the cream and egg mixture. Stir until blended.
Pour the entire mixture into the pie plate. Fold the dough that is hanging over the rim of the pie plate toward the center over the mixture.
Bake the quiche 30 minutes or until a knife inserted comes up clean

That's it! Simple, isn't it? Anyway, I got that off of the website posted below, vegetarianrecipe.com and we've loved it (almost) everytime I've made it....(There was the little incident where I added a 2 ounce package of the soup mix [remember, it's the powder stuff] Yikes, that was nasty.)
