There always will be. I lived eight years in Europe (West Germany and England), and we used to go all over western Europe on the weekends. There was still a lot we missed. Some of what impressed me the most:

Northern Wales. Visit all the castles. Castell Caernarfon (in the northwest) is my favorite of the tourist attraction castles because of how labyrinthine it is. But perhaps more fun are the broken down castles where there aren't so many tourists and gift shops. You can pretty much poke around those wherever you want.

The Swiss/Austrian Alps. I learned to see in the Austrian Alps. You can take a chair lift up and basically ski the whole day before you hit bottom. But if skiing isn't your thing, you'd still enjoy it. Those mountains are gorgeous. You know how pictures never do the real thing justice -- the beautiful scenery in "The Sound of Music" doesn't do them justice. Be sure to poke around the older villages nestled at the base of the Alps -- there's a lot of culture to absorb in the old European architecture and the woodworking/crafty-type places the Europeans are noted for.
