Many multi-floor department stores and shopping centers stagger their escalators so you can't go straight to your floor, or go up and back down again, without walking past some merchandise first.
In shopping centers, small stores pay higher rent to be farther from the large "anchor" stores, because as people get close to the anchor store they walk faster and are therefore less likely to stop and buy something.
Also, the supermarket shelf that is most likely to catch your eye is about 30 degrees below eye level. That's the one companies pay to have their product on.
