But what's to stop you from flipping the sandwich over once it's together?
I probably assemble the sandwich as you say. I'm not sure. But I eat it with the peanut butter slice on the bottom simply because it seems to taste better that way. A couple times I've not paid attention and gotten it wrong, and something funny about the taste calls my attention to it, so I flip it.
I think with the peanut butter on the bottom, your tongue comes in contact with more peanut butter than jelly, so maybe that's why. When I was a kid, I use to be a jelly fiend, like you, although I never thought much of preserves. I like Smuckers strawberry jam, which has a consistency between preserves and jelly -- essentially like preserves, but spreadable.
However, as my twenties have progressed, my preference for jelly has waned (comparatively), and I've discovered what a truly delicious food peanut butter is. I love peanut butter. My peanut butter and jelly sandwiches are usually somewhat thick with peanut butter, and I love peanut butter on celery. I alternate between Peter Pan creamy and any brand of natural peanut butter -- the kind that separates when it sits, and you have to stir before spreading. That stuff is goooood. Nice and strong.
