Easy enough. Those people who mouth the strange comments that you mention about "I'm a vegetarian except I eat fish and chicken" are simply Pseudo Vegetarians, as you say. They're simply clueless non-redmeat eaters, who have no idea what the term 'vegetarian' means in its obvious sense (and of course, it doesn't sound hip to the clueless to claim Pseudo Vegetarianism in any way, shape, or form.)

I think there is some validation to the vegetarian position in general. If you check Genesis 1:29-30, there is an indication that God's ideal decree for a perfect world -- before the Fall, mind you -- originally would have been for vegetarianism amongst humans and animals. No killing, and no blood being spilled.

Even if a carrot does get killed when you pull it up, when's the last time you saw a carrot put up a bigger fight than an apple? Couldn't one equally argue that picking the apples off the 'Mama tree' is no different than 'stealing' and 'murdering' her 'babies'? Rather specious logic. Feh." spirit
