Brie Cheese Surprise. CHEESE!!!

I was looking for a Mother's Day recipe which didn't involve cakes or pies or the overly sweety-sweet choco-glop. We tried this particular one, which is really good and REALLY easy. I like it so much I have to share it with the Cheese-Lovers here (you know who you are :-)


PIŅA COLADA BRIE

Preparation time: 5 minutes
Cooking time: 15 minutes.

1 (1 pound/450g) round Brie cheese*
1 can (8 oz/226g) of crushed pineapple in syrup, drained
3 Tbsp honey-roasted peanuts**
3 Tbsp brown sugar
1 Tbsp flaked coconut***
French bread, or crackers

1. Place Brie on an overproof serving platter.
2. Combine drained pineapple, peanuts, and sugar in a small saucepan. Cook until thoroughly heated. Spoon mixture over cheese.
3. Bake at 400°F/200°C for 8 to 10 minutes or until the cheese is softened. Sprinkle coconut over pineapple topping and continue baking just until coconut is lightly toasted. Serve with fresh crusty French bread or with water crackers.

Very, very simple. Sometimes this kind of recipe is the best kind.

Notes:
/ / / / * Brie cheese, the buttery mild-flavoured one with the soft white edible rind, comes in flat round cakes about 5 to 7 inches wide. You could use Camembert cheese, but since it is a thicker round, Camembert cheese is a bit more sour.
/ / / / ** Honey-roasted isn't necessary. You can buy plain peanuts and roast them yourself.
/ / / / *** Can substitute dry flakes with shavings of real, fresh green-coconut jelly. :-)
