Heh. Slight language mix-up for a British reader, sorry. The type of coconut meat I'm referring to is neither 'green' in itself nor a jam (jelly). I guess the image I inadvertently conjured up was something like Green Eggs and Ham; that won't do.

Young (called 'green') coconuts (about 1 month old, I think) contain a soft milky-white flesh which is naturally cool, sweet and creamy. This "green coconut jelly" is a treat that can be scooped out of the nut and eaten like an ice cream in taste and texture. I've got an information leaflet which says only the green coconuts contain about 350-460 cc of a very refreshing watery juice, which is ridiculously healthy and high in minerals and vitamins, especially Vitamin C. One only has to worry about the high "tropical fat" content of the chewy, crisp flesh inside the more mature brown coconut husks.
