If you choose "Write Disk", you're not able to write to it anymore. If you choose "Write Session", you may write more sessions to it later, and each session will show up on the desktop as separate volumes.

Heh. That's rather interesting how that works on a Mac. The behavior is, of course, quite different in Windows; the multiple sessions are simply combined into a single directory, as if you had written all the data at once to begin with.
