I don't know about CD-RWs, but I know about CD-Rs. With my CD burning software (Adaptec Toast -- for Mac, of course :-), you can at burn time choose to write either a disk or a session. If you choose "Write Disk", you're not able to write to it anymore. If you choose "Write Session", you may write more sessions to it later, and each session will show up on the desktop as separate volumes.
