Well, my favorite thing to make myself for lunch/dinner is a skillet concoction. Usually this involves tuna fish, because there are always millions of cans of tuna in the pantry, but it can be chicken, and tonight it was catfish. And then, whatever else is in the pantry. And garlic. You can't forget the garlic. My mother is Italian, so I have grown up in the firm belief that garlic goes with everything.

Take one skillet. Cut whatever meat or related product you're using into bite-size chunks. Raid the pantry and the fridge, take whatever looks good, cut it up, and throw it in. I usually use olives, tomatoes, mushrooms, and sprouts, but sometimes I'll get, er, adventurous. (You probably don't want to know.) And garlic - "to taste", which in my case means enough to solve the whole neighborhood's vampire problem. :-) Heat until the fish is cooked and the tomatoes and mushrooms are soft enough to be cut with a fork. Serve in a pita or over rice.
