The only way to know if you can survive level 8 monsters is to try fighting them. If level 7 monsters are too easy, I'd say it's time.

As long as you have enough gold to resurrect your party once over, you may as well go for it. The worst thing that can happen is you end up farming more gold on level 7, plus you'll get a rough idea of how much stronger you'll need to get before venturing back down to level 8.

Much more likely, you'll encounter one party, realize partway through combat that you won't beat them, and flee back to town. (Is that what homing stones do? I forget.)

One mistake I made, a good long time ago, was finding a new (and very expensive) town on a deep level, entering it out of curiosity, leaving it to explore further, getting royally pwnt, and not having the gold (almost said "meat") to resurrect there. So, don't do that.
