I am thinking about retraining one of the Knights as a Druid, one Wizard into a Knight, and the Sorceress as a Rogue, but it will quite a few more levels to go because I'd like to get the full arsenal of spells first...

Since you're only on Level 4, you don't need the full range of spells yet. However, it would be worthwhile for you to have 3 fighters at the front of your party. If you want you can rotate your characters in and out of spellcasting classes until they all learn enough spells to satisfy you.

I can't remember if this is mentioned in the instructions, but after level 14 or so each level-up requires the same amount of experience. Once you're deep in the dungeon and fighting really tough monsters, your newly retrained characters will level up in a hurry and quickly regain their former glory and a full complement of spells. That might be a better time for retraining if you're more concerned with getting through Level 4.

My advice for getting to the end of Level 4 is always to just keep plugging away, get as far as you can, die, and get further the next time with your level-ups. Your casters will gradually accumulate spells, and you'll start seeing how strong a spell you need to cast to beat a typical Level 4 monster.

What classes you have in your MR party are completely your choice. Some of us have made a point of making MR as hard for ourselves as possible, and we've more or less proven you can kill Murkon with any party at all. So don't worry about having the ideal mix.
