My family's favorite Boggle variation is 'almost Boggle', where you look for words that would be there if you could add just one more letter. Working out the specific rules took some time, but we found it put a really weird and geeky spin on the game. You have to have kind of a far-reaching intuitive mind to do really well, but you come up with a lot more interesting words.
