I heard "the proof is in the pudding" all throughout my childhood, so it's definitely older than you think. In fact this is the first time I've ever heard "the proof of the pudding is in the eating". Odd..
Might have something to do with the area you're in. I mean, sayings do change over time and they take additional time to filter across the country. Perhaps less so now than a hundred years ago because of t.v. and the internet, but even *they* aren't instant.
