If you're using Adobe PhotoShop's "save for
web" feature, it will automatically reduce your
image resolution to 72 dpi. If you want to save
a scan as a jpeg at a higher resolution, you'll
need to to do a "save as" instead and select
jpeg from the format list. That way you can
save a jpeg while maintaining the resolution
that you scanned your image in at.

The reason the Save for Web feature does that
is that most if not all browsers are desigend to
display files at 72dpi. If you intend to have
300dpi jpg files up for viewing on the internet,
the browser will make up the difference in
resolution displaying the file way bigger than it
actually is.
