I'd think that just the gravity involved would effect us a lot. If our galaxy has enough gravity to keep us orbiting around the center of it, how would doubling that gravity effect us? We're a pretty delicate species, and it wouldn't take a big orbit change to kill us. That's what it seems like to me, at least.

Sam is correct that the stars would be unlikely to collide. However, Wes is also correct that it could have other effects. I imagine that, with the gravity doubling, it would be quite possible (or at least more likely than colliding stars) that the solar system might swing into the multimillion-degree galactic center... And if it doesn't, then the gas and dust of the collision might send a few comets Earth's way. Or new stars might form in the neighborhood of Earth because of the dust and gas.

BTW, here is an annotated copy of the image Wes mentioned, which mentions the effects of the collision.
