> Here is one of my favorite recipes. Why post it here, you might ask? One, because I love the recipe and thought others might as well, and two, because I keep losing the recipe, and this is my blatant attempt at not having to call my mom every time I want to make it. ;-) Enjoy!

Spread chicken on top of broccoli (I usually either boil or fry up 4 good sized chicken breasts, and then chop up into bite-size pieces. My mom likes to cook a whole chicken and then use that. Another option, for those of you that are lazy, is to get the tyson already-cooked frozen chicken pieces and use those. Use as much or as little chicken as you like, or as your pocket book allows. :). Mix soup, mayo, and curry powder, and spread on top of chicken. Sprinkle with bread crumbs, and then with cheese. Sprinkle melted butter on top. Bake at 350 for 25-30 minutes. Enjoy!

And for dessert!!!:

Super Chocolate Fudge

1 package (300 grams) semi-sweet chocolate chips

1 can of Eagle Brand Sweetened Condensed Milk

1 and 1/2 cups (300 mls) icing sugar

pinch of salt

1 teaspoon (5 mls) vanilla

1/2 cup (125 mls) chopped nuts (optional)

Melt chocolate chips and Eagle Brand over low heat...stir in remaining ingredients...spread in a wax-paper-lined pan (8in x 8in)
chill 2-3 hours until firm...turn out and remove paper...cut in to squares (small ones it is VERY rich!!!) store loosely covered at room temp.

I made this last week and I'm still trying to finish it off...
