Most healthy is tough, as Bourne said, but I believe most healthy *looking* is slender, but not too thin. Some people think automatically that women who are very thin have an eating disorder, without stopping to consider that it may be genetics. (As an aside, I think it's ironic that our culture idealizes being thin, yet creates an environment in which it is so easy to be overweight. And it's sad that some people think that since it is so hard for the majority of the population to be slender, the people who are must be, without a doubt, starving themselves to do so.)
A most attractive weight is tough to say specifically as well, because it depends on things such as how tall you are. But I personally think the most gorgeous woman ever is Marilyn Monroe, and in general, I would consider her an ideal. Not sure if it's coincidence, but she really fits my definition of most healthy looking, as well.
