Well, part of the reason they do that is because, when a ride they want to build costs more than they'd like to spend, they get an outside company to fund the construction and maintenance in exchange for advertising (Energizer for Star Tours, Fed-Ex for Space Mountain, etc.), and I believe Kodak prints the maps for them, which is why they say "compliments of the Kodak company" or something like that on them.

Most of the other ads there (or at least at the Disneyland location, anyway) are outside the actual parks and are in the area between Disneyland and California Adventure, which you also walk through to get to the parking lot. These signs advertise upcoming Disney movies and ABC TV shows and so on. They're hard to avoid (you pretty much have to be blind), but at least they're outside the park.
