None of your "massive spoilages" were anything that would ruin the movie for me when I see it, and you have now removed my main fear about the story's adaptation to film, which was the ghastly rumour that Arwen had been turned into a Xena-type main character who accompanied the Fellowship on their quest.

From what you describe, the way Jackson chose to give her more screen time is just the PERFECT solution, without demolishing the way Tolkein intended the character to be or completely messing up the plot.
