Go see an evening concert at Sainte Chapelle. It's a gorgeous chapel which has walls made entirely of stained glass windows. When I was in paris, we heard a string ensemble play Vivaldi's Four Seasons there, just as the sun was setting.... absolutely one of the most amazing experiences of my life.
In any case, they have a concert there every evening, and often two showings of the same concert. Go the first day and get tickets for whatever concert you want to see over the next few days.
