Well, let's say there's some sort of mystical, ancient power in some artifact, which bestows amazing fighting ability to whomever the artifact deems worthy, or something like that. The Thai guy could be someone who's trained all his life for a chance to be accepted by such a power, but is rejected; and the Scottish guy accidentally picks it up one day or something and the power goes to him. This makes the Thai guy pretty mad, and boom, you have a fight; a fighter built in a lifetime vs. a fighter built in a second. =)
