When one thinks of Idaho potatoes, don't they come across as the very exemplar of 'generic'? As in: large, uniform, cylindrical, starchy, and rather boring tasting. Idaho's Russet Burbanks supposedly are what McDonald's uses exclusively. Their choice is frustrating to potato growers because McD demand spuds with almost no sugar content -- otherwise the natural sugar in the potato ruins the perfect "golden-fry colour" when the shoestrings are cooked. Clearly, the way the spud looks is far more important than flavour or nutritional value; and it's ALL MCDONALD'S FAULT for forcing market values which are destroying the very life and breath of quality in Idaho potatoes. Gah@! Mr. Potato Head politics!
