Well it shouldn't worry you too much. The recent Irish referendum failed to ratify the Treaty of Nice (by about 70% majority), so it can't happen until Brussels find a new way to trample roughshod over the democratic rights of member states. And they're trying, believe me.

Why would we need a PC term? We're talking about countries in the eastern part of Europe. It's no more offensive than, say, "The North Eastern Seaboard", or "The South of France".

"Signee" is probably acceptable. "Signatory" is the one that comes to mind though.
