Speaking as another Tabletop-RPGer who avoids CRPGs for the same reasons, can I recommend The Elder Scrolls II: Daggerfall by Bethesda Softworks?
It's not perfect, but you can ignore the plot completely if you so desire, and instead work on becoming a nobleman, or whatever. Of course, what you say to people is still limited, but most of the time you're asking directions or they're offering you employment, so it doesn't matter too much.
Of all the CRPG's I've seen, it's the one that comes closest to a real RPG. Mind you it's still not that close, but until they invent full-immersion VR role-playing, moderated by artificial intelligences, it'll do.
It's a few years old now, and there have been a couple of sequels, but none as good as this one.
