I posted a long explanation about this, but it seems to have slipped off into cyberneverneverland. I even did a search. Nothing.
Anyway: Adiabatic cooling occurs when warm moist air flows up a mountside. Lower pressure causes the air to expand. Although the amount of heat remains the same, the temperature drops, and when the dew point is reached, condensation begins. Then you get precipitation. That's why mountains get more rain than plains. I guess that happens in Spain, but never having been there, I'm just guessing.
