No, really--i don't generally wake up hoarse. Of course, that's because i sleep with two pillows to keep my head elevated and face my bed so that the air vent blows over my body instead of straight into my face.

Aside from any air circulation in the room, though, it may just have to do with the general relaxation the body goes through at night, spreading out while at rest.
Relaxed vocal folds = lower voice (just like on a stringed instrument)
