I suppose if you didn't know the Canadian national library keywords were "Provincial and Territorial Symbols," you might have difficulty finding the official emblems.
You can find the info for Québec at http://www.nlc-bnc.ca/services/quickref/esymbols.htm
However, on that page, the floral emblem for Québec has gone out of date. It is now the Iris Versicolor (Northern Blueflag iris, or le fleur-de-lys bleu), which is native to Eastern Canada and New England.
As far as I know, there is no official animal for Québec -- unless you count the Canadian beaver, which was the major raison d'être of the fur trade in Nouvelle France.
Pray tell, for what reason do you need to know the emblems? Merely curious.
