Oh, this sounds serious. If she wants to break off an engagement, she must be very upset. There must be some reason to make her think that you're listening to her calls. It also sounds like a communication problem between the two of you. I would suggest that you first try to figure out WHY she doesn't believe you, rather than try to defend yourself. If you defend yourself, that will only make her more mad, and she will think, "If he really didn't do it, then why is he getting so defensive over it?"
Start there, take it one step at a time, and see what happens.
