Supply and demand, I suppose. If you eat it, they're going to kill another to replace it.
Consider this, though. Kosher butchers cut through the sciatic(sp?) nerve, minimizing the pain. Then they make sure to drain the blood. But you can be sure that they won't go for slaughtering a pig for meat.
