Although it's one of those words that have a slightly varying definition and connotation depending upon who you're asking, they're all probably still in the same ballpark.
Here's the attributes that I would consider indicative of a redneck:
•Favorite car: Truck
•Favorite truck accessories: gun rack, lift kit, chrome anything, lights, lights, and more lights
•Favorite shirt: flannel, plaid, with stains
•Formal wear includes: bolo tie, nice boots, cowboy hat
•Education: some
•Favorite composer: Ummm... that one guy...
•Family event: Monster truck show

There's probably a few more that I can't think of at the moment, but that's the gist of it.
Should this be offensive to anyone? I hope not. You are who you are, regardless of how many attributes relate to you directly. Using a term such as "redneck", is just a simpler way of describing a person that may inherently have all of these qualities. Similarly, if I were to describe a person, or group of people, as being "regal" you'd get a pretty good idea of what that person(people) is like without having to describe a laundry list of specifics.
