Also, it is made with chopped steak or cube steak, not "steak" steak, like a sirloin or T-bone or what-have-you. At least, I have never heard of it made with choice cuts of meat.

Up here in Ohio, and I'm sure in other locales as well, they also serve a dish called Swiss Steak. It's made with cube steak, drenched in a tomato gravy with lots of vegetables in it. I personally have never tried it, but our senior citizens really seem to like it.
