I don't know if this is the one you're talking about, but I like the muscle called the "sterno-mastoid" muscle. It's the one that goes from just behind your ear down to your collarbone. If you clench your jaw just right, you can make this muscle stick out and you'll look like a Cardassian. I think it's actually a tendon.
