There used to be a great steak restaurant where I live. You picked out the actual steak you wanted from a cooler display, took it to the guy, and told him how you wanted it. They had actual photos stuck up over the grill showing cross-sections of steaks in various stages of doneness, and you could just point out your preference. Now that I think about it, that sounds really weird, but it was an awesome restaurant and you got *exactly* what you wanted.
Of course, if you want steak that would make a lifelong vegetarian sit up and beg, go to Espiritu Santo in Vanuatu (formerly the New Hebrides, in the South Pacific). It doesn't matter how they cook it. Anything from raw to charcoal, it's beyond your wildest dreams. Save your money. Buy a plane ticket. It's worth it. Ahh, happy memories.
