As it happens, since you said that, I'd been meaning to pick out a shortlist for you. These are not the "best" movies, or even my favourites, but they're the ones I think you're most likely to get something out of

The First Great Train Robbery
Highlander
The Iron Giant: Special Edition - A giant robot teaches a young boy about friendship.
Last Action Hero - Schwartzenegger spoofs himself
The Man Who Knew Too Much: The Masterpiece Collection - One of my two favourite Hitchcock movies. And you don't have Rear Window on here.
The Man Who Wasn't There - Coen Brothers film noir
Nosferatu - The original (and best) Dracula movie
Shadow of the Vampire: Widescreen - Watch Nosferatu first, or it won't make much sense.
Silent Running
This Is Spinal Tap: Special Edition - You've not seen Spinal Tap? Seriously? Are you sure?
The Return of Spinal Tap
Tommy - My favourite rock opera
The Trouble with Harry: The Masterpiece Collection - Hitchcock's least Hitchcockian movie.
Ultraviolet - Not the recent movie, but a British TV series about vampire hunters.
The Usual Suspects: Special Edition - This is one of those movies where anything you can say that will encourage people to watch it is also a massive spoiler.
Victory - Allied prisoners of war in a game of soccer... to the death!
Stardust: Widescreen - the best fantasy movie since Princess Bride

That ought to keep you busy for a couple of days.
